Radio Interview With Maria Balinska

Radio Interview With Maria Balinska

April 17, 2014-  Below is a great radio interview with Bagel Expert and Davidovich Bagel fan, Maria  Balinska, author of THE BAGEL: A SHORT HISTORY OF A MODEST BREAD

Conversations with Voice of the Arts

Maria Balinska – The Bagel

Maria Balinska – The Bagel
Maria Balinska is the author of the new book, The Bagel, an authoritative history of that humble but iconic breadstuff. Balinska sorts fact and fiction as she traces the history of the bagel back through centuries and civilizations, documenting its evolving treatment by bakers, artisans, comic, painters, and even poets. During the holiday of Passover, Jews are not supposed to eat leavened bread and the bagel is perhaps the ultimate pop-culture representation of both leavened bread and Jewish cuisine.

Essex Street Market To Hold Tasting Event and After Party

Essex Street Market To Hold Tasting Event and After Party

Posted on: February 7th, 2014 at 11:47 am by

The Essex Street Market will soon present foodies with a veritable smorgasbord, by way of a tasting event and
after party. Local vendors are lined up to showcase their finest, through unlimited bites and bevs. The event will
also showcase Celeb Chef Brooks Headley of Del Posto, who will cook some tasty bits made exclusively from
Essex Street Market vendor ingredients. After that, you and your food coma can roll on over to the dj’ed after
party at the Essex Restaurant.  It seems that the considerable tasting events around New York often leave a
bitter taste in the mouth; supply never satisfies demand and all that. Here’s hoping that the hosts, Time Out
New York and the Lower East Side Business Improvement District, have figured out a happy medium that
isn’t building capacity, and that attendees know “tasting” isn’t synonymous with “all-you-can-eat-buffet.”
The night of sampling is slated for February 20, 7 – 9:30pm, with the after party rocking from 9:30 tip
the break of dawnclose. Sorry kiddos, the event event is 21+.  You can grab tickets ($30) at Time Out.

February 8, 2014-            The new year has brought the promise of exciting new products, events and opportunities from the Davidovich Bakery Team.   Here are just a few of the exciting things happening in an effort to provide the wholesale world and the consuming public with the finest Artisan baked goods and service in the world:

The Food Babe
1.   Azodicarbonamide-     Prior to last week, the vast majority of the public had never heard of this widely used chemical in baked goods containing bleached flour, but thanks to, Charlotte-based Food Blogger, The Food Babe, the Subway restaurant chain has agreed to remove it from their ingredients list.  Davidovich Bakery lauds this "grass-roots" campaign to improve the health of American Consumers.

While this change may be new for Subway, Davidovich Bakery has a long history of leading the charge towards better baking through the use of only the finest ingredients.   This includes:

  • No Azodicarbonamide in its flour
  • Only unbleached flour is used in its products
  • No, cancer causing, bromating agents are used in its products
  • No artifical enzymes, food colors or chemicals are used in any products
  • No GMO's used in any of their ingredients
The concept of "clean" baking is nothing new for the Davidovich Bakery Team-it has been part of the mission to bring consumers, not only the best tasting, but also the finest food profile in baked goods available since 1998.

The LES Sandwich
2.    National Bagel Day-      Sunday February 9, 2014 was declared National Bagel Day across the United States.   In celebration of this exciting celebration of NYC's iconic baked good, Davidovich Bakery NYC, 120 Essex Street, NY, NY 10002 will be offering a series of promotions and samplings to share its passion for their all natural, kettle boiled, plank baked, kosher bagels.   Check out the fun!

Davidovich Bakery Petitions Obama Administration To Protect Artisan Bakers

Davidovich Bakery Petitions Obama Administration To Protect Artisan Bakers

January 24, 2014- It has now been almost two years since Davidovich Bakery took on commercial giant Dunkin Donuts by filing state and Federal complaints to halt the deceptive use of the word "Artisan" to describe their bagels. At that time Davidovich Bakery vowed to spearhead the the fight to protect Artisan Bakers across the country. Now as part of that effort Davidovich has filed a Petition with the Obama Administration to protect the use of the word "Artisan" and limit it to its true meaning. This will stop large, commercial bakers from attempting to steal the value inherent in the word without using Artisan techniques and processes.

In order to win this fight we need 100,000 signatures in the next thirty (30) days. Please visit the below link and electronically sign the Petition and Please circulate it to as many people as you can. This fight is impossible without your support. Together we can win this battle.

Dear friends,

I wanted to let you know about a new petition I created on We the People, a new feature on, and ask for your support. Will you add your name to mine? If this petition gets 100,000 signatures by February 23, 2014, the White House will review it and respond!

We the People allows anyone to create and sign petitions asking the Obama Administration to take action on a range of issues. If a petition gets enough support, the Obama Administration will issue an official response.

You can view and sign the petition here:

Here's some more information about this petition:

Support the Codification of an Artisan Certification for Bakers and Craftspeople that employ Artisan techniques.

There is currently no uniform, Governmentally approved certification for Artisan Craftspeople in the United States. Many large companies have begun campaigns designed to deceive the public about their processes and procedures by labeling their products as "Artisan" when they are not. Artisan implies a small batch, traditional process, where products and food are made using the assistance of real human beings, not complete automation. The FDA has recently refused to take a strong position in the case of "Davidovich Bakery v. Dunkin Donuts" in the matter of Dunkin Donuts erroneous claims that their automated, commercially manufactured products were Artisan because there was no codified legal standard. This continued dilution will bankrupt true Artisans all across the United States.

Davidovich Signature Coffee Garners Positive Reviews

Davidovich Signature Coffee Garners Positive Reviews

January 6, 2013- In December, Davidovich Bakery unveiled its new line of Signature Blend coffees at their Essex Street Location in NYC.  These blends have been in the works for sometime, and according to retail spokesperson, Kate Knizhina, the company believes they stand up to all the major coffee houses in and out of New York City. "At Davidovich we don't perceive coffee as an afterthought to our Gourmet food offering; we see it as a partner. Before we were willing to put the Davidovich name on any coffee products we wanted to be certain they would meet the high standards our discerning customers had come to expect from us"

Davidovich may have really tapped into something, as early reviews of this product line support the company's claims.  Here is one review posted on the company's Facebook site:

Beth Napolitano-"My dad really enjoyed Davidovich Espresso beans (purchased from Essex Market Stand). He said it was smooth - he can't stand bitter, acidic coffee! And he commented that it was way better than Starbucks - not over roasted like their beans tend to be. Based on his thumbs up - he's a tough coffee critic - I would highly recommend. I don't normally write reviews, but this was a find and I was compelled to share. Don't even get me started on Davidovich Bakery's baked goods!!"

With this partnering of the finest Artisan baked goods on the market with Signature Beverages 2014 offers the opportunity to create new excitement for the Davidovich Bakery brand and products.

Here is some more information about the Davidovich Signature Coffee Blends obtained from the company spokeperson:
