Davidovich Bakery A Winner of Phase One of the NYCEDC Business Innovation Challenge 

July 11, 2013-  The New York City Economic Development Corporation (NYCEDC) announced today that All Natural Products Davidovich Bakery, the manufacturer of the world famous Davidovich Bagels, was among the Phase One winners of the NYC Business Innovation Challenge.

This fierce competition invited NYC businesses to "create a plan to provide their employees with a path to improve skill sets, career prospects, and economic opportunities, while helping the business attain higher employee retention rates, organizational performance and revenues." Members of the NYCEDC, together with Next Street Bank, selected the winning plans from among hundreds of submissions in each of the three tiers, which were divided up by the employment size of each of the applicant companies.

All Natural Products Davidovich Bakery's  innovative plan is to create an in-house incubator and training program to develop artisan bakers.  Once the training period is complete Davidovich will connect those artisan bakers with bakeries in need of this talent.  This plan was among the five (5) Phase One winners in the 20-250 employee size tier.

When asked about the genesis for this program, one of the owners of Davidovich Bakery said, "We are passionate about artisan baking.  We believe that, fundamental to our mission, is not just to be an artisan bakery but to help keep the artisan tradition alive.  What better way to do that than to train future artisan bakers in the craft."

The next phase of the competition will involve a four (4) month pilot program for the implementation of the winners' plans.  Upon the conclusion of the pilot phase, the initial panel of judges will evaluate the success, scalability, and sustainability of each of the programs and then announce the Grand Prize winners.  Grand Prizes of $100,000.00 will be awarded to one applicant in each of the three tiers in December of 2013.

Whether you like it or not, the two word term ‘gluten-free’ has been coming up a lot more often, not only in the grocery aisles but also in the media. People all across the nation have noticed, in some capacity, this growing food trend. As people become more aware of the benefits of cutting down on or expelling gluten from their diets, demand for gluten-free products has grown greatly over the past few years.

According to a survey conducted by the NPD Group, a consumer research firm, thirty percent of adults are interested in cutting down or avoiding gluten altogether in their diets.  This growing interest has contributed to the growing gluten-free food market which today stands as a $4.2 billion industry. The gluten-free interest has grown so much that even the restaurant industry can’t ignore it.  The interest is most definitely there and growing, with 200 million restaurant visits in the past year including a gluten-free order.

Taking in all of these numbers, the question might still remain: What is a gluten-free product? Simply put, a gluten-free product is a product that does not contain gluten, a protein composite found in grains such as wheat, spelt, barley and rye. Gluten is what gives dough its elasticity, helping it to rise and keep its shape resulting in a final bakery product with a chewy texture.

So, why are there an increasing number of people trying to avoid gluten in their diets?  One reason is that 3 million Americans have been diagnosed with celiac disease, making the disease four times more common than it was 50 years ago. People who suffer from this disease cannot consume any gluten as it can cause intestinal damage. Another reason is that a growing number of people are finding that they are sensitive to gluten and suffer slight allergic reactions if they consume food with gluten in it. One other reason is that there is a growing number of consumers that are interested in embarking on a course towards a "healthier lifestyle" overall and they believe the eradication of gluten from their diet is a good step in that direction.

But even with this increased talk of the gluten-free food trend, it can be very hard to find good tasting gluten-free product that makes consumers not miss the “real” thing. Knowing this, Davidovich Bakery  refused to release it's gluten free line until it was confident they were offering the best gluten-free products that are on the market. The world famous Davidovich Bakery will be proudly sponsoring the NY Fencing Academy's Senior Mixed Epee Cup competition to be held on Sunday June 9, 2013 at the NY Fencing Academy headquarters located at 2896 W. 12th Street, Brooklyn, NY 11224.  This exciting USA Fencing (USFA) sanctioned event will take place at noon in the NY Fencing Academy's, newly renovated, state of the art facilities located in the historic Coney Island section of Brooklyn.   

For those unfamiliar with the art of fencing, Epee is one of three modern sport fencing weapons utilized by fencing competitors around the world.  Epee matches are noted for their intense drama as competitors employ speed, concentration, and accuracy as they duel for points where their opponent's entire body is a viable target for scoring.  Even those unfamiliar with the technical rules of the sport will appreciate the intensity, excitement, and sportsmanship of this event.

Davidovich Bakery has a long history of supporting exciting New York City sports events, including the NYC 5 Boro Bike Tour and the NYS Taekwondo Championships.  The addition of sponsoring a fencing event is of particular excitement, as the company's owners have a long history of involvement with this international sport.

What is the Kouign Amann? A Primer....

What is the Kouign Amann?

There is a little, French pastry that is gaining real traction the United States bakery world and that pastry is the Kouign Amann.   Fans of this delicacy will attest that once you have tasted it you are hooked for life.  While everyone who has tasted this extraordinary delight agrees that it is first rate, there are still many questions consumers have about the product.  Here is all you need to know:

How do you pronounce the name?

In a recent sales tour of NYC I was amazed to discover that nearly 100% of the merchants, food experts, and consumers were completely unable to pronounce the pastry's name.  It is actually quite simple, the correct, phonetic pronunciation is "Kween a-mon".  Once you get past trying to sound it out and know the actual pronunciation it is easy.

What does Kouign Amann mean?

It derives its meaning from the Breton, or Celtic words for Butter Cake.   So as we uncover more about the name of the product we are also learning more about why it is so tasty.

What is the Kouign Amann?

It is a slow baked, round, crusty, cake made with bread dough and containing layers of fine french butter and sugar.  The slow baked process causes the dough to puff up and the sugar to caramelize resulting in a sweet, buttery, decadent little pastry.

Is this a new creation?

While the pastry is just coming to the attention of many in the United States it has been around since the 1860's in the western part of France, where it was created, and has been a specialty there since that time.
